There were several bags of nopales displayed on top of the raw meats in the meat case. The manager then moved most of the nopales to the refrigerator. Inspector's notes

Observed meat around the meat slicer blade. Employees said it had not been used since the previous day. The slicer was disassembled and cleaned. Also observed meat left under the cutting board tables. The tables were re-cleaned. This establishment is currently using stickers to keep track of the time to clean the equipment, as it is required, they are fully washed, rinsed and sanitized every 4 hours. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-4-702.11 - Priority: Cleaned and Sanitized Before Use After Cleaning.
