Observed TCS food items with internal temperature between 49-53F stored in the large walk-in cooler. TCS foods included milk, bacon, butter, deli sandwiches, and breakfast sandwiches. The person in charge stated the food items had been in the walk-in cooler for more than 4 hours. Improper cold holding items were embargoed at the time of inspection.
