#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed bottles of fruit juice labeled "perishable, keep refrigerated" inside of a reach-in beverage display case with an internal temperature as measured using a probe thermometer of 55°F. A min-max thermometer was placed into the unit and allowed to stabilize for 10 minutes. The min-max thermometer was stable at 55°F. According to the person in charge, the juice was received yesterday and had been in the case since yesterday. The perishable juice was embargoed at time of inspection (see embargo form). Person in charge will reach out to a technician to look at the unit. In the meantime, no time and temperature controlled for safety foods will be stored in the case until repaired. Discussed with person in charge to place a small thermometer inside the case to have an additional means of verifying holding temperature. The establishment has sufficient cold holding capacity to operate safely. Corrective Action: Corrected at time of inspection.
