Upon re-inspection all violations have been corrected. The owner chose not to conduct any outdoor cooking and therefore did not apply for a handwash sink installation or submit plans for review. Verified that no food was being cooked on the backyard grill.

PIC was observed cooking burgers outdoor behind the exit door. There is no hand-washing sink outdoors. Establishment with a catering permit may perform outdoor cooking with requirement of a handwashing sink with warm water, soap and drying means. Apply for minor remodel via department plan review program and install hand washing sink outside. Cease outdoor cooking until violation is corrected and hand-washing sink with soap and paper towel is provided by scheduled re-inspection. Corrective Action: Correct prior to re-inspection.

Three packages of raw burgers stored on top of cooked chili in reach in cooler in food prep area. PIC removed the raw items and took it to cook line to prepare for cooking. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
