Observed reach in refrigerator on server line with an ambient temperature ranging 45-50*F and active leak from compressor causing standing water on bottom shelf. Person in charge placed a maintenance request and removed all temperature-controlled foods and placed in neighboring units for holding at 41*F and below. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.

Inspector's notes

Observed there to be no hand drying paper towels at the handwashing sink at the servers station and one near the beverage station. PIC supplied both sinks with paper towels at time of inspection. Hand drying towels must always be available at all hand washing sinks. Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing. Also discussed hand washing use limitations. Corrective Action: Corrected at time of inspection.
