Inspector's notes

Observed shredded cooked chicken in walk-in cooler with internal temperature of 46*F. Employee stated the chicken had been placed in the cooler the night before. Ambient temperature of walk-in cooler was 49*F at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Of note: observed numerous packages of reduced oxygen packaging (ROP) arepas with and without meat or cheese fillings in a retail freezer. Reduced oxygen packaging used for time-and-temperature control for safety (TCS) foods longer than 48 hours requires a variance/HACCP submittal. Per person in charge (PIC), all items were cooked, cooled, frozen, and sealed the previous day.

Inspector's notes

Observed a large diameter deep metal bowl (>4" deep) of cooked shredded beef with a tight plastic wrap covering cooling at 70 degrees Fahrenheit in a reach-in refrigerator. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per person in charge (PIC), beef was cooked less than 2 hours prior to inspection. PIC instructed employee to portion beef into shallow containers to facilitate rapid cooling - inspector verified temperatures. Corrective Action: Corrected at time of inspection.
