Observed cut melon, sour cream, French fries, shredded jack cheese, cooked chicken breast, chicken patties, chicken tenders, cooked sausage, liquid cheese that required refrigeration, deli turkey, deli ham, sliced cheddar cheese, hashbrowns, and raw pork cold holding in the only refrigeration unit at 60-71 degrees. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
