Observed deli ham, commercially made burritos, eggs, bacon, hashbrowns, French fries, raw tilapia fish, raw beef, cooked chicken, cooked beef, cooked pork, cooked rice, cooked beans, shredded jack cheese, cooked beef burgers, raw sausage and cheddar cheese cold holding at 55-60 degrees. Per PIC food was placed in refrigeration unit greater than 2 hours prier to inspection. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed raw tilapia fish at 56 degrees inside of ROP packaging. Per PIC fish is thawing. Informed PIC that all ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

PIC explained the food was put into the fridge at 6am this morning. Explained all TCS food are to be cold held at 41 degrees or below. PIC explained the the refrigeration units handle was broken and the gaskets were not sealing properly. Informed PIC cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. PIC was able to tape doors closed and refrigeration unit was able to maintain an ambient air temperature of 43 degrees. Corrective Action: Corrected at time of inspection.

Informed PIC equipment is required to be kept in food repair. PIC was able to get an appointment today to have unit repaired. Corrective Action: Correct prior to re-inspection.
