Observed milk cold holding at 47 degrees. Per PIC milk was placed in the refrigerator greater than 2 hours prior. Informed PIC that Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC discontinued service and discarded milk. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed multiple gallons of milk in the refrigerator. Per owner milk will be used for the next service. Time/temperature control for safety foods shall not be held over from a previous day's operation. All overnight storage of TCS foods must be done at an approved commissary. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed no commissary logs on unit at time of inspection. Per owner they do not have a commissary. Informed PIC that 30 days of commissary logs are required to be available for inspectors to review at all times. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Observed no commissary agreement. Per owner, they do not have a commissary agreement. Informed owner that Mobile food establishments shall provide a commissary agreement. Mobile units shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Corrective Action: Correct at once. MCEHC Chap. 8, Sec. 3, Reg. 8l - MF Type II-Connections to water or wastewater systems are not approved except during servicing operations at a commissary or as approved by the Department. Addl Notes: Observed no commissary agreement. Per owner wastewater is dumped at his home property. Informed PIC that all waste water is to only be disposed of at an approved commissary. Corrective Action: Correct at once.
