Observed staff wash hands at unit's exterior beverage dispenser which is not approved as a hand sink. Employees must wash their hands in a handwashing sink or approved automatic handwashing facility. PIC reminded worker that washing hands was to only take place inside the unit and operator proceeded to wash hands inside the unit to attain compliance. Observed out of temperature foods including shredded lettuce at 55°F, chicharron (pork) at 61°F, and shredded cheese at 55°F. Per PIC, foods had been placed on truck from commissary about 30-60 minutes prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC placed out of temperature foods on ice to rapidly cool to required temperature. Corrective Action: Corrected at time of inspection.
