Inspector's notes
Observed a container of nacho cheese sauce in a bottle that was hot holding in a warming sleeve device according to the person in charge. The internal temperature of the nacho cheese was 74°F as measured using a probe thermometer. According to the person in charge, the cheese had been in the bottle for less than an hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. It was observed that the warming device being used to keep the cheese hot was quite small and only covered approximately 1/5 of the bottle, leaving most of the bottle exposed. Discussed with person in charge to use a more capable hot holding unit or a nearby stove to keep cheese above 135°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
