Inspector's notes

Observed from register area sole employee present take payment in cash at register, then proceed to grab bag and metal scoop to scoop kettle corn from kettle machine with bare hands, with hands touching the bag interior and kettle corn visibly brushing over employee's hand as it went into the bag. Employee did this twice in sequence while inspector was still awaiting entry to unit. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink and donned gloves at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee grab bag and metal scoop to scoop kettle corn from kettle machine with bare hands, with hands touching the bag interior and kettle corn visibly brushing over employee's hand as it went into the bag. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. PIC was told not to serve items that had touched their hands and keep them in display area, and properly washed hands and donned gloves at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Tested chlorine sanitizer solution in spray bottles used for food surfaces reporting >200ppm at time of inspection, with visible flashing on the test strip upon testing. PIC said they did not prepare the bottles and that they would tell the person who was in charge of making the solution. PIC was instructed to dilute the sanitizer to proper levels at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.
