Inspector's notes

Refrigerated prep cooler near rear entryway observed holding lettuce (50°F), Salsas (49°F), and vegan cheese (51°F) all above 41°F. Ambient temperature of the refrigerator recorded holding at 51°F. Food was confirmed to have been placed into refrigerator cold holding roughly 3 hours prior, and lettuce was confirmed to have been prepped early in the morning. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Lettuce was discarded at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
