Observed several containers of aguas frescas including a melon fresca containing muddled fruit and horchata containing dairy held at 64*F. The operator stated that they use time as a control due to limited temperature control, but could not provide up-to-date temperature logs. Additional ice was added to the containers to bring down the temperature. Corrective Action: Corrected at the time of inspection.
