Inspector's notes

Observed no CFPM (Certified Food Protection Manager) holder at the time of inspection. Operator was informed that a CFPM is required to be onsite at all times during operation to ensure that active managerial control is being maintained at all times. Corrective Action: Correct prior to the next routine inspection.

Inspector's notes

Observed a container of cheese and cheese mixed with chicharron temped at 53*F at the prep table, as well as a container of ground meat at 44*F within the fridge unit. Operator was informed that all TCS (Time/Temperature Control for Safety) food items such as meat and cheese required to be held at or below 41*F. Operator added additional ice to the prep table, placed the meat within a secondary container with ice within the fridge, and lowered the fridge temperature to reduce the internal temperature to 41*F at the time of inspection. Corrective Action: Corrected at the time of inspection.
