Observed door open during service. Outer openings of a food establishment shall be protected against the entry of insects and other pests by screening in or closing doors. Per PIC, screen previously on door broke a couple days before inspection. PIC has been notified to either close door or obtain a new screen. PIC will close door until another screen is installed. Corrective Action: Correct prior to next routine inspection.

Observed al pastor cooling on bottom shelf of standing fridge near rear of truck. Al pastor read at 89*F; per PIC had been cooling for about an hour. Per MCEHC, cooling is not allowed on mobile units due to equipment capacity unable to rapidly cool hot foods. PIC reheated al pastor on griddle to satisfactory temperature and will hot hold on griddle for remainder of service. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code.

Inspector's notes

Observed packages of raw pork chorizo at the bottom of reach in refrigerator reporting at 47°F and 49°F. Operator said they had been purchased at the end of last week (over 3 days prior) and immediately stored in the refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Operator confirmed that pork chorizo on unit had been carried over from the week prior and have been kept in the fridge the entire time. Per MCEHC, All time/temperature control for safety foods shall be prepared on the same day of sale or service. Time/temperature control for safety foods shall not be held over from a previous day's operation. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Operator's commissary visit logs were not up to date and partially filled out. Last date included on log was from roughly 3 months prior. Per MCEHC, this log shall be maintained using a Department approved format and maintained with the establishment at all times.
