Observed no CFPM on duty at the time of inspection. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Observe employee disconnect waste water tank, take it outside and dumb gray water into courtyard garden. PIC explained he wasn't aware it wasn't aware he coulnt dumb his gray water on the ground. Explained to PIC gray water can only be removed from a mobile food establishment at an approved waste servicing area or by a sewage transport vehicle in such a way that a public health hazard or nuisance is not created. Corrective Action: Correct at once.

PRIORITY VIOLATION-5-402.13 - Priority: Conveying Sewage
Inspector's notes
Observed mobile unit using location of operation (church) equipment for overnight food storage, 2 compartment sink for wear washing on site, and chemical storage. Per PIC, they use Church 2 compartment sink and upright refrigerator to wash some of their dishes and store milk, cold brew, cold brew with milk added for next days service. PIC provided sanitizer and test strips stored under counter space not apart of the unit. Per PIC, they use these cabinets to store chemicals as well as syrups for drinks. Explained to PIC all food storage, wear washing, chemical storage, overnight storage of TCS items must be done at an approved commissary. Corrective Action: Correct prior to re-inspection. MCEHC Chap. 8, Sec. 3, Reg. 6b, 8c, 9b, 10c, 11b - All time/temperature control for safety foods shall be prepared on the same day of sale or service. Time/temperature control for safety foods shall not be held over from a previous day's operation unless otherwise approved by the Department. Addl Notes: Observed milk, cream, cold brew and cold brew with milk stored in Church equipment. Per PIC, products were at location of operation upon starting his day. Per PIC, items are kept from previous day for use on todays service. Explained to PIC no overnight storage of TCS products is permitted on the unit and all TCS products leftover at the end of service must be discarded. PIC voluntarily discarded TCS items at time of inspection. Corrective Action: Correct prior to re-inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed no commissary logs available for review at time of inspection. Explained to PIC, 30 day record of commissary logs are required to be available for inspectors to review. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Per PIC, they do not take the unit to the commissary at the end of service. Per PIC they dump gray water on site outside after service. Explained to PIC, mobile unit bust remain mobile and visit commissary to dispose of gray water after every service. Corrective Action: Corrected at time of inspection.
