Observed 2 large molcajetes at clean drain board of 3 compartment sink, not in use. Operator said they rarely used them for seasonings and flavorings. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Operator must cease use molcajetes for ant food preparation. Corrective Action: Correct at once.
