Inspector's notes

Observed several pans of raw chicken sitting on the top rack above prepackages ready to eat food, and also a bag of bread sitting on the top tray that is cover with the raw chicken, located in the reach in refrigerator. Discussed with the person in charge that all raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked rice in a large pan sitting at the bottom of the refrigerator with internal temperature of 55 degrees; however, all other TCS food were at 41 degrees and below. Per the person in charge, the rice was sitting out when they were making customer orders an hour prior to this inspection and placed back in the unit. Discussed with the person in charge that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Operator corrected by using time as control for the cooked rice. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a pipe connected to the mobile unit at time of the inspection. Discussed with the operator that MF Type III-Mobile food establishments shall not connect to water or wastewater systems except during servicing operations at a commissary or as approved by the Department. Operator disconnected the water pipe at time of the inspection. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed no commissary visit log at time of the inspection. Per the person in charge, they are cooking daily at their approved commissary. Discussed with the person in charge that Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Please have your commissary visit log prior to your next routine inspection. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 9e - MF Type III-All cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Addl Notes: Observed a small grill sitting on a table outside of the unit. Discussed with the person in charge that MF Type III-All cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Operated corrected by removing the grill at tim eof the inspection. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Observed Mobile Unit not reporting daily to commissary at least daily, when operating for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Per the person in charge, they were hauling the gray water and refilling at the carwash where the unit is parked. Discussed with operator that Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this department and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Corrected at time of inspection.
