Inspector's notes

Observed a build-up of white organic matter in the soda dispenser nozzle of the soda fountain. All food-contact surfaces must be cleaned to sight and touch and cleaned with a frequency that prevents the build-up of organic matter. PIC removed the nozzles from the fountain and sanitized them during time of visit and plans on further training of night crew in charge of sanitizing the nozzles. Corrective Action: Corrected at time of inspection.

Upon re-inspection walk-in refrigerator ambient temperature holding 45*f degrees holding TCS food items. Manager stated cooler door has been left open for several hours due to stocking. Plastic slats are recommended to hold proper temperature to ensure TCS food items remain in temperature. Equipment holding TCS food must be able to maintain items below 41*f degrees. Observed Temperature control for safety food items (TCS) holding in a reach-in fridge unit next to the ice cooler holding at 48* degrees. Items include Bacon, milk, cheese, yogurt, butter, salami & cheese, half &half, launchable, Chocolate milk. Manager did not have an approximate time items have been out of temperature. All TCS food items embargoed. All TCS Food items must be maintained at or below 41* degrees. Observed breakfast sandwiches, chicken sandwiches, omelets in walk-in holding at 46* degrees. Manager stated that a delivery had just been made for beer to the walk-in cooler and door had been open for an extended period of time. Other TCS items deeper in cooler had temped at or below 41* degrees. Instructed operator to move TCS food items to a different working cooler at time of inspection. It was brought to the attention of the manager that ice build up is accumulating on the back of the refrigeration units. TCS foods moved to a different cooler holding proper temperature at time of inspection. All Equipment holding TCS foods must be maintained at or below 41* degrees.
