Observed meat slicers in the deli, which are kept above 55F, with an large accumulation of deli meats on the equipment, including the blades. The PIC was stated that the slicers were cleaned at least once per day. They were unaware of the last time the slicers were cleaned and sanitized other than it had been more than 4 hours. Their shift had started 4 hours previous and the slicers were not clean when they arrived. Equipment food-contact surfaces and utensils are to be cleaned throughout the day at least every 4 hours. Reviewed cleaning frequency with the employee and the store manager. Instructed them not to use the slicers until they had had been cleaned and sanitized. Correct By: Corrected At Time Of Inspection
