#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed raw seafood products with a temperature ranging from 45*F-48*F in the fish case, which had an ambient air temperature of 46.5*F, using a min/max thermometer. These items included smoked crab legs, crab cakes, raw shrimps, and lobster tail. PIC stated that the items had been put in the case about an hour and a half prior to inspection. Instructed PIC to move the items to a walk-in cooler to rapidly cool down to 41*F. PIC moved all TCS food items improperly cold held to the walk-in. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the fish case holding an ambient air temperature of 46.5*F, measured using min/max thermometer. PIC stated that the items were placed in the unit about an hour and a half prior to inspection. Informed PIC that the unit cannot be used until it is fixed and able to maintain TCS foods at 41*F or below. PIC moved all food product out of the unit and into the walk-in. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 08/19/2024.
