Observed dishes actively being sanitized at 3-compartment sink in less than 150 ppm quat. PIC drained and refilled sink and concentration was still measuring below 150 ppm quat. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC will hand-dose sink until repaired. Concentrations should be checked using test strips after setting up sink. Corrective Action: Corrected at time of inspection.
