Observed shepherds pie labeled date prep on 11/4, per PIC shepherds pie was made 11/9. Also observed lettuce cut 2 days prior incorrectly dated for 11/6. Observed cooked chicken tenders with no date mark, per PIC chicken tender was made the day prior. Observed cooked sausage opened from package 2 days prior with no datemake. Also observed containers of cut lettuce with day of prep written for 1 day in future (8/30). Discussed with PIC that date marking is required for RTE TCS food items and must be accurate dating. All food items were dated accurately. :
