Observed employee handling raw beef proceed to handle raw fish without first washing hands. Discussed importance of washing hands for 20 seconds with hot soapy water, in between switching tasks and when handling different raw proteins to prevent contamination.

Handwashing sink was obstructed by large cart of boxes in meat room. PIC relocated all items blocking handwash sink at time of inspection. All handwashing sinks must remain accessible at all times.

Remove old seal to ensure there is not gap between the wall/countertop and the surface is smooth and easily cleanable prior to the next routine inspection. Discussed that quat sanitizer concentration should be maintained between 150-400 ppm (per manufacturer’s instructions) and verified with a chemical test strip. Reviewed three compartment setup and sanitizer testing with PIC. The PIC placed a work order on the unit at the time of inspection and stated dishes would be washed, rinsed and sanitized in another area until repairs are completed.
