Inspector's notes

Observed pork with internal temperatures ranging from 44-54*F on customer facing refrigeration unit at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) stated the raw pork had been in the unit since the day prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff verification breakdown which resulted in the violation. Corrective Action: Corrected at time of inspection.

Ensure barriers are provided between raw and ready to eat foods in all areas of the establishment. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. Corrective Action: Corrected at time of inspection.
