Inspector's notes

Observed sheet pans in the high-temperature dishwashing machine at the time of inspection. After multiple washes, establishments 160*F high-temperature stickers did not change color and per inspectors min/max thermometer, water temperatures reached a maximum of 152.6*F. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Instructed PIC to sanitize sheet pans in three compartment sink at the time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff (verification breakdown), which resulted in the violation. Consecutive repeat: 3rd. Corrective Action: Corrected at time of inspection.

Observed no test strips for sink and surface cleaner at the time of inspection. Per employee, sink and surface cleaner is used in spray bottles to clean food contact surfaces such as food prep tables and the bread slicer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Can be verified electronically.
