Inspector's notes

Observed several boxes of produce sitting on the floor inside of the produce walk-in cooler. Discussed with person in charge that food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Person in charge had the boxes of produce moves onto nearby pallets. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed cooked hominy, masa quebrada cracked masa in an open air cooler near the bakery holding at 63 degrees F. Observed unit display thermometer at 63 degrees F. Per PIC products should have been at 41 degrees F or below. PIC threw out all products in unit and discontinued use until fixed. Observed various salads in far right corner of produce section holding a variety of salad mixes (garden iceberg, fresh express leafy green, spring mix and arugula, Caesar salad kit, chicken Caesar salad kit, turkey ham salad kit, bagged spinach, veggie lovers with romaine and iceberg out of temperature ranging from 47-57 degrees F. Per PIC the area was stocked around 5 am. Display thermometer registered 48 degree F. TCS foods must be kept at 41 degrees F or below to prevent growth of pathogens. Observed tongs missing from several bread containers near bakery. Also observed several scoopers missing for beans and peppers near produce on the right back side of retail floor. Tongs and scoopers are required for self service areas to avoid customers coming in contact with ready to eat foods. PIC said they would replace the missing scoopers and tongs.
