Inspector's notes

Observed a box that was originally labeled for raw chicken legs that contained raw cuts of beef on a metal storage rack with wheels in the walk-in cooler. It was observed that the box had what appeared to be the seasoning that is used for coating the raw chickens due to its yellow color, which was also observed on the raw beef. The box was also above other containers of raw beef. The beef in the box labeled for raw chicken was embargoed at time of inspection (see embargo form). Discussed with person in charge to keep raw proteins separated based on final cooking temperatures and to not mix raw proteins between their originally labeled containers due to cross contamination. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a bottle of ammonia glass cleaner stored on top of a foam container of plastic-wrapped salmon fillets in the meat seafood walk-in cooler and also observed a spray bottle with oven degreaser/cleaner in a cardboard box with cotton rags that was sitting on top of another container that had dried shrimp in it in the same walk-in cooler. All chemicals were relocated to the designated chemical storage area. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
