Reach-in table with shredded lettuce, diced tomato, shredded cheese had an internal temperature of 47*F at time of visit. Kitchen temperature was above 95*f at time of visit and caused food temperature to increase when equipment is open and in use. All other TCS foods underneath were below 41*F. Discussed using time as a control for TCS foods and also discussed keeping an ice bath to help maintain temperatures below 41*f. Also observed refried beans, green chile meat, green chili sauce, raw pork, with an internal temperature of 45-46*F in walk-in cooler. Technician was on site to make repairs and bring temperature below 41*F at time of visit.
