Inspector's notes
Observed raw beef at 52F inside the prep fridge. The raw beef was well above the cold hold line in the fridges. Inside the wells, items were 40-42F. As per manager, items where there for 1 hour, moved to another unit down below. Ensure that all TCS foods during cold holding are kept at 41F or less. Corrective Action: Corrected at time of inspection.
