Observed sodium nitrate (pink salt) in food storage area. According to manager, sodium nitrate is used to cure corned beef that is for sale every thursday in the establishment. Observed raw corned beef being cured in sodium nitrate brine at time of inspection. Food shall be protected from contamination that may result from the addition of unsafe or unapproved food or color additives and from unsafe or unapproved levels of approved food and color additives. Variance is required to use sodium nitrate. Please discontinue use of sodium nitrate until approval is acquired. Corned beef was embargoed at time of inspection and sodium nitrate was removed from establishment. Corrective Action: Corrected at time of inspection.
