Inspector's notes
Two-door reach-in cooler near cooking equipment had the following TCS foods measuring an internal temperature of 47-48'F: milk, salsa, cooked chicken, and heavy whipping cream. Per person in charge temperature of food had not been verified at any point in morning. As it could not be determined how long food had been out of temperature food was embargoed. Ambient air temperature of cooler measured 48.2'F with min/max thermometer. Person in charge placed work order to have technician service cooler. Other adequate refrigeration nearby. TCS foods shall be held at 41'F or lower when cold holding. Corrective Action: Corrected at time of inspection.

Per employee in charge of kitchen cooler had been verified to be holding proper temperature at beginning of day, <4 hours prior. Ambient air temperature measured 54.1'F with min/max thermometer. Adjoining freezer door was propped open and temperature of walk-in began to slowly drop. Two-door reach-in cooler near cooking equipment had the following TCS items measuring an internal temperature of 47-48'F: baked beans, orange juice, garlic in oil, milk, heavy whipping cream, and raw shell eggs. Ambient measured 50.9'F, temperature of cooler verified to be working <4 hours prior. Informed person in charge that food from cooler needed to be temporarily moved in walk-in cooler. TCS foods shall be held at 41'F or lower when cold holding. Correct By: Corrected At Time Of Inspection
