Corrective Action: Corrected at time of inspection. Popcorn chicken cooked from raw frozen at 148*F internally when pulled from the fryer after timed frying. Manager had the chicken returned to the fryer for further cooking. Discussed ensuring the fryer basket is not over-filled so all the product is fully submerged in the fry oil, checking the temperature of multiple pieces of chicken.

Person in charge (PIC) discovered that the hot water booster was not turned back on after maintenance on the hot water heater was conducted. Discussed with person in charge (PIC) that after maintenance with water heater, PIC should check the temperature of the water to ensure that it is the right temperature and that repairs are corrected. Observed hot water to entire store restored after booster was turned back on.
