-- At dishwashing area, observed employee with gloved hands spraying off dirty dishes, scraping consumed food into trash, running dishes through dishwasher, and stacking clean dishes to put away without washing their hands and changing gloves between tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Requested employee properly wash their hands at handwash sink before putting away clean dishes at time of inspection. Requested items that came in contact with soiled gloves be rewashed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

The dishwasher was primed and reran multiple times and it consistently tested below the 50ppm-100ppm requirement. The PIC stated a work order will be placed to repair dishwasher. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
