Observed various temperature control for safety dairy products in the cooler. PIC stated these items had been inside the cooler more than 6 hours. These items were voluntarily discarded - see embargo list for details. Ambient temperature of unit measured 50*F at time of inspection. Discussed cold holding requirements, instructed PIC to discontinue use of unit for TCS foods until in good repair. Alternative refrigeration is available to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed in the back by the three compartment sink antifreeze containers stored over chips and soda bibs. Discussed with PIC chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. No contamination observed. Corrective Action: Corrected at time of inspection

Discussed with Person in Charge (PIC) that fixed equipment that is not spaced to be easily cleaned shall be sealed with caulking to create a smooth and cleanable surface to prevent the accumulation of contaminants.
