Inspector's notes

Observed a gallon of milk and butter cold holding in the reach-in refrigerator with internal temperatures of 47F, probe thermometer, verified by PIC. According to PIC, the TCS foods were brought into the kitchen when the food for breakfast was delivered, less than 2 hours prior to inspection. The milk and butter were placed into an ice bath and alternate refrigeration to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. See violation #33. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the reach-in cooler with an ambient air temperature of 46.6F, min/max thermometer, verified by PIC. There is only one refrigerator in the house. The TCS food in the unit had an internal temperature of 47F, see violation #22. PIC contacted maintenance during the inspection to repair the refrigerator. Equipment for cooling and cold holding TCS food must be sufficient in number and capacity to provide proper food temperatures (41F or below). Re-inspection 10 days. Corrective Action: Correct prior to re-inspection.

Provided information on the plumbing requirements for the RO systems. Please remove the tank and drain line that is directly plumbed to the waste line of the 2-compartment sink. Filters that have the drain line connected to the waste line of the 2-compartment sink must be replaced to filters that do not require flushing.
