Inspector's notes

Handwashing sink near visitor side grill had a broken grill and had no water under pressure. Discussed that hand sink in snack bar did not have sufficient proximity or accessibility for the grill area. Operational manager located new hose for handwash sink. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed nacho cheese in crock pot at 108-115*F. Instructed staff to turn up warmers and verify the temperatures. Staff increased temperature of crock pot and warmer until cheese was within hot holding temperatures. Corrective Action: Corrected at time of inspection.

Observed tomatoes and lettuce in disposable aluminum foil tray on top of ice used for hamburgers holding at 48-55*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed staff to add more ice to the tray in order to sufficiently cool the tomatoes and lettuce. Educated on using a bigger tray at the bottom or placing items in a cooler with ice when serving the lettuce and tomatoes to ensure enough cooling capacities. Corrective Action: Corrected at time of inspection.
