Observed large cylinder container of chopped lettuce in a tightly sealed container in single door reach in at grill, with an internal temperature of 47*F. Observed square container, tightly sealed, with salsa in walk-in refrigerator with an internal temperature of 48*F. Person in charge stated foods were prepared within 4 hours prior to inspection and had cook remove lids and place all foods on ice bath for quick cooling to 41*F within 15min. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
