Person in charge placed out of order sign and placed work order. No food to be held in unit until unit can maintain a temperature of 41*F or below. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Observed grilled chicken thighs and chopped chicken breast in top compartment of cold holding unit at an internal temperature ranging 58-109*F. Person in charge stated food was prepared within 1 hour of inspection. All food cooling should be cooled in walk-in refrigerator to ensure proper cooling times and to maintain temperature of surrounding foods.
