TCS food must be maintained at 41*F or under written time control procedure. Discussed requirements for receiving TCS food from the supplying caterer. The 3 compartment sink for warewashing has a direct drain connection. Recommend an indirect connection, such as a riser or hub drain for the 3 comp sink.

Inspector's notes

Clorine sanitizer bucket measured above 200ppm with inspector's test strips. After diluting the sanitizer solution, the test strip still measured above 200ppm. Inspector found bleach bottle and found that it is not bleach, but Clorox Clean-up Concentrate. Discussed the error with person in charge (PIC). PIC went to the store a bought the correct bleach. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.
