Observed cooked salmon, spicy chicken, and steak holding 108-112F in the steam table. The steam table was turned down to 2, causing temperatures to drop. PIC stated that the products had been cooked 20 minutes prior. PIC reheated them to 165F before putting them back on the assembly line. TCS food must be stored at 135F or greater when hot holding. Corrective Action: Corrected at time of inspection.
