Observed the following cooked plant foods: broccoli (48°F), sliced onion (47°F), sliced carrots (48°F), cut mushrooms (48°F), veggie mix (48°F), cut bell peppers (48°F), and raw in shell eggs (48°F) stored in the prep table nearest to grill. All TCS foods which had been in the unit overnight were embargoed (see embargo list). The prep table measured at 48.3°F with the min/max thermometer. Manager will place TCS items in the nearby standing refrigerator until the prep line cooling unit can maintain temperatures below 41°F. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.

Observed miso soup (78°F) cooling in the refrigerator in a tightly plastic-wrapped metal container. Instructed staff to unwrap the container and only loosely cover it until it has fully cooled to 41°F. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
