Observed employee in meat department washing tubs used for holding raw meat in the three compartments sink without placing tubs in the sanitizer compartment as per dishwashing procedure. Manager replaced sanitizer for the sanitizer compartment and employee properly washed rinsed and sanitized bus tubs. Corrective Action: Corrected at time of inspection.

Observed beef tips, pulled pork and scalloped potatoes cold holing in a portion of meat retail case at an internal temperature of 48-54 deg F. The cold case was holding <41 deg F and manager informed these food items had been holding in case since night prior and discarded. Corrective Action: Corrected at time of inspection.
