Observed 0 ppm Chlorine sanitizer in the conveyor dish machine in the back of house. The machine is normally hi temp but is currently on chemical until the booster heater is fixed. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. The PIC was able to fix the chemical dispensing line and then tested correctly. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

PIC called the technician to service the unit and they arrived while inspector still onsite. The food in the walk-in cooler remained in temp due to being in ice baths. Final construction inspection for a Class 4 10+ E&D permit was conducted with construction team and operations team by appointment. The establishment was closed and not operating a time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Certify and provide a test report. 2) Provide an ASSE 1013 reduced pressure backflow preventer upstream of all glass rinsers.
