Inspector's notes
Observed stacked metal pans stored as clean on the drying rack with visible food debris on the inside of the pans. Discussed cleaning procedure for dishes with PIC. Also discussed wet stacking with PIC. Ensure all pans are allowed to air dry completely prior to placing in storage to prevent cross contamination. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Correct prior to next routine inspection.
