Observed high-temp dish machine operating at 156.3'F after 3 priming runs of the unit. Per PIC, they will submit a work order to have the unit serviced and will discontinue use of the dish machine until repairs are made, such that surface sanitizing temperatures reach a minimum of 160'F. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed cut tomatoes (47'F), breakfast sausage (49'F), cubed deli ham (46'F), and sliced deli turkey (48'F) stored in cold holding drawers directly beneath the flat-top at time of inspection. Cold holding drawers beneath the flat-top were measured twice via Min/max thermometer to be operating at 21.1'F and then again at 46'F at time of inspection. Per PIC, the food inside was placed inside from the walk-in cooler during breakfast service, about 1 hour prior to inspection. Discussed servicing the unit and discontinuing use until such repairs are made ensures all food held within is maintained at or below 41'F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
