Observed grease and debris accumulating on the floor and wall behind the cooking equipment. Please have this area cleaned and cleaned at a frequency to prevent accumulation of debris and residues. Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed the floor under the ovens coming up off the ground and falling apart making it no longer smooth and easily cleanable. Please have the floors under the ovens repaired or replaced to ensure they remain smooth, durable, and easily cleanable. Corrective Action: Correct prior to next routine inspection.

Also discussed quality control for freshness as it relates to hot holding wells near the deli area. All TCS food products held under temperature control must be maintained either at/or below 41'F or at/above 135'F at all times. If TCS food products are held under Time as a control they must be time-stamped/logged and discarded after a 4-hour period of being outside temperature control.
Inspector's notes
Observed Bone-in BBQ chicken wings (126-133'F), and boneless buffalo chicken wings (118-128'F) being stored in the hot holding steam table. Per PIC, the food had been placed in the wells about 1 hours prior to inspection. Discussed proper hot holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Manager was able to clear the blocked drain and get the water flowing from a full blockage. Ensure that all sinks/drains are properly draining. Corrected on site.
