In the bakery, observed the high temp dishwashing machine in use and not reaching 160*F per the establishment's temp dots. Dishwashing machine must hit 160*F and change the color of the temp dot. Please have dishwasher repaired prior to using again. Until repaired establishment will utilize 3 compartment sink to sanitize dishes. Corrective Action: Corrected at time of inspection.
