Inspector's notes

Observed cold display case located in front of meat counter holding packaged pre-cooked ham and packaged raw bacon with internal temperatures between 44*F-47*F. Ambient air temperatures of unit ranged between 38*F-40*F on the bottom and middle shelves on end caps of unit. All other TCS items (mashed potatoes, macaroni and cheese, salsas, hummus) in unit had an internal temperature at 41* or below. All TCS foods improperly cold held were placed in an area designated for "distressed items" by person-in-charge (PIC) at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC removed all TCS items from lower shelf and stated temperatures will be taken frequently throughout the day to ensure the unit is functioning properly. PIC submitted a work order to have unit inspected. Corrective Action: Corrected at time of inspection.
